Ancient cultures of the world met in the city of Ryazan. How has the Forum of ancient cities been held


From 12 to 19 August in the ancient city of Ryazan, founded in 1095, a unique event — the First international forum of ancient cities, which brought together more than 48 cities of Russia and 12 countries of the world, with an age of over 500 years, was held.


Among the main objectives of the major event organized by the Government of the Ryazan region, the Ministry of Culture and Tourism of the Ryazan region under the auspices of the Commission of the Russian Federation for UNESCO, were the consolidation of the Russian and world community around the ideas of preservation and development of the ancient cities, the development of inter-ethnic and intercultural cooperation, strengthening of inter-regional and international relations, the elaboration of domestic and inbound tourism.

In frames of the Forum, the International Center of Wine and Gastronomy and a tour operator OblakaTravel organized an extensive business programme themed as "Gastronomy tourism of ancient cities". The "Stariy Gorod (Old town)" Hotel became the main venue of the programme from 16 to 18 August.


On August 15, the press center of the Forum hosted a press conference for media with the participation of the organizers and speakers of the business programme of the event. On behalf of the Organizing Committee Leonid Gelibterman presented the key events of the programme to the participants of the briefing.


On August 16, the official opening of the Forum and the plenary session on "History of the ancient cities cuisine: intergenerational continuity. Gastronomic history, traditions and culture as one of the most important factors of tourism development" took place at the "Stariy Gorod (Old town)" Hotel. The meeting was opened by the Governor of the Ryazan region, Nikolai Lyubimov. Oleg Safonov, Head of the Federal Agency for Tourism (Russiatourism), addressed the audience with his greeting. The moderator of the meeting Leonid Gelibterman, President of the International Center of Wine and Gastronomy, read out a testimonial from Igor Barinov, Head of the Federal Agency for Nationalities Affairs. During the plenary session, the Ambassador Extraordinary and Plenipotentiary of the Republic of Uzbekistan to the Russian Federation Mr. Ashrafkhanov, representatives of Armenia, Estonia, Greece, Spain, as well as Russian cities: Moscow, Makhachkala, Pskov, Ryazan and Suzdal made their speeches.




Speakers of the Forum shared with the participants of the meeting their experience in the gastronomy tourism development and organization of the events with a gastronomic component in different regions and countries, spoke about advanced technologies for creation and promotion of local gastronomic brands based on historical products of a region. The neseccity to consolidate efforts to create joint cross-regional and international projects in the development of tourist destinations, including through the gastronomic component, was emphasized.


Round tables "Tourism and hospitality industry" under the moderating of Igor Bukharov, President of the Federation of Restaurateurs and Hoteliers of Russia, and "Practic experience of gastronomy tourism development", under the moderating of the President of the ICWAG, continued the plenary session. There was an interesting, emotional dialogue between the representatives of the tourism industry, F&B producers, restaurateurs, hoteliers and the officials. Conclusion is that it is necessary to develop public-private partnership.


In the evening of August 16, a dinner was held by the Association of the culinary specialists of the Ryazan region, who presented the author's menu of specially designed for this event dishes based on local products. Chefs Maxim Titov ("Bon Appetit" Restaurant), Irina Danilova ("Buffet" Restaurant), Sergey Privalov ("Aragon" Restaurant), Alexander Lazukov ("Sova" Restaurant), Ivan Borisov ("Rimskie Kanikuly" Restaurant) and Alena Nefedova ("Grafin" Restaurant) has prepared a gastronomy set of meals of the Ryazan region for Russian and foreign guests, which, by the way, has been gathered with nearly 100 people. Partners of the dinner cuisine of the Ryazan region were the "Pokrovskoye" private farming, which presented cheeses and dairy products, as well as manufacturers of Russian alcoholic beverages — "Kuban-Vino", "Alma Valley", "Ladoga", "AST–International Environment". Special glasses and dishes were presented by the "Bar-Service" company.





On August 17, the participants of a special master class had an exceptional opportunity to touch the culture of consumption of classical Russian alcoholic beverages — the "highest drinks" — held by the reenactor of historical Russian cuisine recipes and drinks, writer and author of many books Igor Shein from the city of Krasnoyarsk. A prominent expert prepared for a tasting the rare examples of traditional drinks — Erofeiches, Vodkas, Starkas, Ratafies, Nalivkas (liqueurs) and Staged Honey.


On the same day on the street terrace of the "Stariy Gorod (Old town)" Hotel gastronomic master classes by invited chefs from different cities of the world were held. Everyone could not only learn the recipes, but also taste the traditional dishes from the cities of Perm, Pskov, Tallinn and Tashkent. Michelin starred French chef Michel Lentz finished a series of international master classes, making the Tartiflette and the "flower" salad from the Ryazan products, not forgetting to fry local chanterelles.





The gastronomic culmination on August 17 was a dinner of Cuisines of the ancient cities of the world, during which the chefs from Armenia, Estonia, Greece, Peru, Russia and Uzbekistan have prepared a real gift for guests — a menu according to traditional recipes of their countries. The Governor of the Ryazan region, the Ambassador of Uzbekistan to Russia, the Head of the administration of the city of Ryazan, as well as other high-ranking officials honored the evening, which gathered about 150 guests. The wine and gastronomy partners of a dinner became the "Izborskiy Pryanik", "Kuban-Vino", "AST – International Environment", "Lefkadia Valley", "Ladoga" and "Yerevan brandy factory". The highlight of the dinner was the cultural programme presented by the Armenian and Uzbek diasporas of the Ryazan region.





The feast of cuisines of the ancient cities of the world continued on August 18 with a series of master classes for a wide public. Chefs from Athens and Yerevan prepared traditional dishes of their countries. Historians and popularizers of Russian cuisine Olga and Pavel Syutkin from Moscow completed the gastronomic part of the Forum of ancient cities, and prepare Kurnik (chicken pot pie) and rye Kissel according to historic recipes with a modern implementation, accompanied their speech with the exciting narration about the history of traditional Ryazan land products and dishes.



The First international forum of ancient cities in Ryazan has received a wide response in the federal and local media and caused a positive feedback from the residents of the Ryazan region and its guests.
